Christmas coffee cookies to leave by the tree.
Espresso Napoletano Kimbo
Ingredients
- 2 cups of Caffitaly Kimbo coffee
- 300g white flour
- 100g brown sugar
- 100g butter
- 50g potato starch
- 1/2 teaspoon baking powder
- Salt to taste

Prepare the coffee and let it cool

Mix the sugar with room-temperature butter until creamy

Add salt, flour, coffee, and baking powder dissolved in water

Form a compact dough and refrigerate wrapped in plastic for 1 hour

Roll out and cut with Christmas cookie cutters

Bake at 180°C for 12-15 minutes

Decorate with white icing after cooling for a festive touch.
