Coffee Cheesecake
Creamy no-bake cheesecake with cookie base and coffee flavor.

Ingredients
- 2 cups of Caffitaly coffee
- 250g cocoa cookies
- 125g melted butter
- 8g gelatin sheets (about 4)
- 300g cream cheese
- 300ml heavy cream
- 100g powdered sugar
- Unsweetened cocoa to taste

Prepare the coffee and let it cool

Crush the cookies and mix with melted butter

Press the mixture into the bottom of a 24cm springform pan

Soak the gelatin in cold water

Beat the cream cheese with sugar and cream

Dissolve the drained gelatin in the coffee and add to the cream

Pour over the base and refrigerate for at least 4 hours

For a professional finish, dust with unsweetened cocoa just before serving.
